Breakfast Envy: Guilty Pleasure Frittata

My guilty pleasure are scrambled eggs for breakfast. However, this meal can get boring after the second week which is why I have been on a search for some new and refreshing ideas to reinvent the classic scrambled eggs recipe. Here is my take on a frittata which was inspired by the post on Cupcakes and Cashmere. Get your aprons ready and lets begin.  

Preparation time: 20 min | Difficulty level: Low to Medium | Serving: 4

 Ingredients: 

6 eggs | 1/2 cup cherry tomatoes | 1/3 green onion | 1/2 cup cucumber | 1/4 cup cheese

Cut up the tomatoes, cucumber, and green onion. On a baking sheet, drizzle some olive oil and place the veggies into the oven for 20 min at a temperature of 300C.

In the meantime, crack the eggs and whisk the eggs in circular motions.

After taking out the veggies, place them on a buttered pan and begin stirring. Add the egg mixture.

Place the pan into the oven for 20 min at a temperature of 300C.

After you have taken the pan out of the oven, while the frittata is still hot, drizzle some cheese on top.

Voila, your frittata is ready! Its a perfect breakfast food that you will devour instantly.
