Mornings Done Right!

Hello dear chefs,

Today we will be sharing with you a scrumptious cupcake/muffin which is a perfect morning pleaser with tea or as a homemade gift for a friend. Get your aprons out and let’s begin. 

Preparation time: 15 min | Baking time: 20 min | Difficulty level: Low | Serving: 12



1+3/4 cup self rising flour | 3/4 cup sugar | 1 teaspoon cinnamon | 2/3 cup milk | egg | 1/4 teaspoon salt | 1/3 cup ground walnuts | 1/4 cup softened butter | 3/4 cup seedless cherries | 2 tablespoons lemon zest | “Nuttela” & sprinkles for decorations    


STEP 1: Into a mixing bowl, stir together the flour, sugar, salt, cinnamon, and walnuts


STEP 2: Into a mixing bowl, beat the egg and butter. Mix on a low setting until blended.


STEP 3: Put the dry mixture into the wet mixture. Add the cherries and lemon zest. Mix with a wooden spoon until well blended.


STEP 4: Take out your cupcake paper cups and fill them with the mixture 2/3 to the top. Place them onto a  baking pan and insert into the oven at 350F (180 degrees C). Leave them in the oven for 20-25 min until golden brown. After taking them out, let them cool for 20 min before decorating.


STEP 5: These are all ready to go. You can leave them like this or decorate them. I asked my younger sister for help with the decorating process. I think she did a great job and it was loads of fun.


We used “Nutella” to decorate these treats as well as some sprinkles. We left some cupcakes/muffins plain since were not looking forward to a potential sugar rush and crash in the morning.
